Grilled Elote Salad

Ingredients

  • 2 ears sweet corn, grilled, cut off cob
  • 1 cup arugula, washed and de-stemmed
  • 2 teaspoons fresh lime juice (or juice of 1 lime)
  • 1 tbsp feta or cotija
  • 4 shishito peppers, blistered
  • 1 tbsp crema (may sub sour cream) mixed with 1tsp olive oil
  • 5-6 cilantro leaves
  • 2 roma tomatoes, seeded and cubed
  • 1/4 teaspoon kosher salt
  • 1/8 tsp achiote powder (may sub any chile powder, depending on heat preference)
  • Freshly ground black pepper to taste

Directions

Combine all in bowl and enjoy!

Makes two entrée or four side servings
