Grilled Elote Salad
Ingredients
- 2 ears sweet corn, grilled, cut off cob
- 1 cup arugula, washed and de-stemmed
- 2 teaspoons fresh lime juice (or juice of 1 lime)
- 1 tbsp feta or cotija
- 4 shishito peppers, blistered
- 1 tbsp crema (may sub sour cream) mixed with 1tsp olive oil
- 5-6 cilantro leaves
- 2 roma tomatoes, seeded and cubed
- 1/4 teaspoon kosher salt
- 1/8 tsp achiote powder (may sub any chile powder, depending on heat preference)
- Freshly ground black pepper to taste
Directions
Combine all in bowl and enjoy!
Makes two entrée or four side servings
