A salad course is almost obligatory at any meal, whether you eat it first, last or as a meal in itself. Many of the salads we enjoy today differ little from what was served at Roman banquets. There are many kinds of salads, from the green salads that gave rise to the term, to vegetable salads, bound salads, fruit salads, dessert salads and main course salads. All cooks need a few reliable dressing recipes in their repertory, in addition to a variety of robust and tasty salads.
