Cochinita pibil is one of the best-known and best-loved dishes of the Yucatan. Cochinita means little pig, and pibil has its roots in the Mayan language, meaning buried. Get ready to savor this traditional dish and learn how to choose the meat, make the rub, find the ingredients, tame the searing heat of the traditional habanero peppers and why we love Seville oranges.
