Based on the book Chilies to Chocolate, Chef Freddie Bitsoie, director of Classic Cooking Academy, will summarize essays on “Food the Americas gave the World.” Creating a menu focusing on ingredients such as amaranth, vanilla, corn, beans, chili pepper, quinoa and, of course, chocolate, he will enlighten modern day notions about new world foods and offer a chance to taste these products as if for the first time.
